
Banana caramel pie
Description
A banana pie full of flavor, made with a minimum of simple ingredients. Can be served with tea or coffee.

1. Preheat the oven to 160°C with the rack in the center position. Grease a loaf pan. Trim the ends off the bananas so that the middle portion fits the size of the pan's bottom. Cut the bananas in half lengthwise and peel. Place them on a plate. Set aside the trimmed banana ends after peeling.

2. In a large skillet, bring 1/4 cup of sugar and 2 tablespoons of water to a boil without stirring. Cook until the water evaporates and the mixture turns amber in color. Remove from heat and add butter. Stir with a fork until melted.

3. Add banana slices, cut side down, and cook over low heat for 1 minute.

4. Place the slices cut side down into the prepared pan. Pour the remaining caramel over the top.

5. In a medium bowl, mash the remaining bananas until you get 1 cup. Add the remaining 1/2 cup of sugar and mix. Beat in the egg, egg white, and vanilla extract.

6. In a large bowl, mix flour, baking powder, cinnamon, and salt. Add the banana mixture and vegetable oil, and stir to combine.

7. Pour the batter into the pan and bake until a toothpick inserted into the center comes out clean, 50-55 minutes.

8. Let cool for 10 minutes, then carefully invert the cake onto a plate and allow it to cool completely before serving. Slice and serve with whipped cream.
