
Zucchini and Herb Pie
Description
Homemade treats for tea. Minimal ingredients and easy preparation come together to create a very tasty summer zucchini pie. You can enjoy this pie every day! The first dough layer has a texture similar to shortbread, while the topping forms a second dough layer. You can add some eggplant or extra herbs to the filling—this will make the pie even more delicious. Optionally, you can add a little mayonnaise to the topping to make it richer and more filling. Serve with tea or coffee.

1. Prepare the dough: beat the eggs until fluffy, add vegetable oil while continuing to beat. Add the sifted flour and baking powder.

2. Knead the dough first with a spatula, then by hand. Cover the dough with plastic wrap and let it rest. Peel the zucchini and cut into pieces.

3. Add chopped garlic greens, parsley, or dill—any fresh herbs. Mix the cooked rice, seasoned with butter, with grated hard cheese. Grease a baking dish with vegetable oil and place the rested dough into it.

4. With your hands, roll out the dough over the bottom of the pan, forming small edges. Place the zucchini filling, then the rice mixture. Prepare the topping: beat the egg until a very fluffy white foam forms.

5. Without stopping, beat in the sour cream, salt, and flour. Beat a little more. Pour the mixture over the pie and sprinkle with grated cheese. Bake the pie for 45–50 minutes at 180 degrees.
