
Pear pie in the oven
Description
The pastry is easy and quick to prepare. If you're curious, the pastry is ready. Serve at the table.

Take a large bowl, chop the chilled butter with a knife in it, rubbing it into the flour. Add powdered sugar, a pinch of salt, and one yolk from a raw chicken egg. Knead a firm and elastic dough, shaping it into a ball. Cover it with a cloth and put it in the refrigerator.

While the dough cools and firms up in the refrigerator, prepare the pears. Peel them and remove the cores, then cut each fruit into four parts. Make longitudinal cuts on each quarter, but not all the way through.

Take the pan in which you plan to bake the pie. Roll out the cooled dough very thinly and place it on the bottom of the pan. Trim the edges with a sharp knife to make them even.

Prepare the cream. To do this, mix the cream, sugar, chicken eggs, and lemon zest grated from a lemon. Place the pear quarters evenly over the entire dough. Pour the cream over the pie, making sure it doesn't touch the pears but goes between them.

Bake the pie at 190 degrees for about an hour until fully cooked.
