
Pie with mushrooms and Stilton cheese

1. Chop the onion. Dice the carrot. Rinse and clean the mushrooms, then cut them in half. Crumble the Stilton cheese. Preheat the oven to 200 degrees. Mix flour, butter, and egg together to form a dough. Add a few drops of milk. Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes. Heat vegetable oil in a skillet, add onion, carrot, and mushrooms, and sauté for 3–4 minutes until the ingredients become soft.

2. Add tomato paste and mix well, then continue cooking for another 5 minutes. Add soy sauce, black peppercorns, and vegetable broth, bring to a boil, reduce the heat, and simmer gently until the liquid reduces by half.

3. Divide the mixture into two parts and fill two baking dishes. Sprinkle Stilton cheese on top.

4. Divide the dough into two parts and roll each out to fully cover the baking pans. Brush the sides of the pans with beaten egg, cover with dough, make slits, and brush the tops with beaten egg. Bake the pies for 18-20 minutes, or until they turn golden brown.
