
Trout Pie
Description
The pastry is simple and quick to prepare. Serve the trout pie cold or slightly warmed. You can use other types of red fish for this pie, such as salmon, Atlantic salmon, or pink salmon. If you don't like olives, you can replace them with green olives or diced sweet peppers. Feel free to substitute the spices with your favorite ones suitable for fish dishes. Due to the nature of the trout pie, it's best to bake it in a silicone mold, as it's easier to remove the pie intact from silicone than from any other type of mold. Serve cooled or slightly warm.

1. Mix the butter, flour, and ice water with a pinch of salt using a blender or chop by hand with a knife. Knead the dough. Place it in a container with a lid or wrap in plastic wrap and refrigerate for 30 minutes.

2. Clean the fish, remove all the bones, and cut it into pieces. Slice the onion into half-rings. Mix the fish with the onion, lemon juice, and spices, then let it marinate for 15–20 minutes. Grate the cheese on a coarse grater. Pick the leaves off the basil. Drain the liquid from the olives.

3. Line the baking dish with the dough rolled out with a rolling pin, making sure to completely cover the bottom and sides of the dish. Place all the filling mixed together inside.

4. To prepare the pouring mixture, combine sour cream with egg and flour. Beat until a smooth mixture forms. Pour this mixture over the filling.

5. Place the pie in a preheated oven. Bake for about 30 minutes or until the surface of the filling is golden brown at a temperature of 180-200 degrees.

6. Remove the trout pie from the mold after it has completely cooled; otherwise, the pie may break apart and look unappealing.
