
Jam Pie
Description
Perfectly pairs with tea and coffee. What's great about this cake? First of all, you can use any jam your heart desires. From my experience, I especially enjoy cakes with raspberry, blueberry, apricot, and peach jams. You can also experiment with the dough. If you're too lazy to make it from scratch, try using store-bought dough. The pastry is ready. Serve at the table.

Take a large deep container. Sift flour with baking powder into it, add sugar.

Make a hole in the center of the flour. Into it, pour the slightly beaten egg and yolk, as well as the softened butter cut into small pieces.

Mix. Then lightly dust the table with flour and place the dough from the bowl onto the surface.

Knead the dough by hand. This will take about ten minutes. Once the dough is kneaded, shape it into a ball, wrap it in plastic wrap, and refrigerate for half an hour.

Then take out the dough, place it on a lightly floured surface, knead briefly with your hands, and roll it out quite thinly (about 0.5 cm thick).

Place the dough into a baking pan (no need to grease with butter; you can simply line it with parchment paper). The diameter of my pan is 22 cm.

Trim the remaining dough neatly, but do not discard it. We will need it later.

On top of the dough placed in the pan, carefully spread the jam in an even layer. Take the remaining dough, gather it into a ball, roll it out and cut into strips. Use these strips to create a "lattice" pattern over the jam. The ends of the strips should rest against the sides of the base dough.

Bake the pie in a preheated oven at 180 degrees Celsius for 20–35 minutes. Adjust the baking time according to the pie's readiness.
