
Blueberry Pie with Brown Sugar
Description
This pie is perfect for breakfast and is also convenient to take with you on a picnic. You can use either fresh or frozen blueberries to make it.

Step 1

1. Preheat the oven with the rack in the center to 190 degrees. Grease a pie pan and place it on a baking sheet. In a bowl, mix flour, baking powder, cinnamon, and 1/8 teaspoon salt. Using a mixer in a large bowl, beat egg whites with a pinch of salt until foamy. In another large bowl, beat butter and sugar at medium speed until creamy. Add egg yolks and beat for another 2 minutes. Reduce mixer speed and add half of the dry ingredients, then all of the milk, and finally the remaining dry ingredients, beating after each addition.

2. Add a quarter of the whipped egg whites to the batter and mix with a large rubber spatula. Gradually add the remaining egg whites. Transfer the batter to the prepared pan. Bake the cake in the oven for 35–40 minutes until golden brown, or until a thin knife inserted into the center comes out clean. Place the pan on a wire rack and let the cake cool in the pan for about 30 minutes.

3. Then remove the pie from the pan, dust with powdered sugar, cut into 5 cm squares, and serve warm. Store the pie at room temperature for up to 3 days. You can also wrap the pie tightly and freeze it for up to 2 months.
