Description

Delicious baked goods for the whole family. A white fish pie is considered universal. It goes well with broths, soups, borscht, and shchi. At the same time it pairs nicely with sweet tea or coffee. It also makes a good snack on its own. You can bake it with cod, hake, mackerel, zander, beluga, or sturgeon. The dough here is the classic one. Our pie didn’t go stale for several days. The next day we took it out of the refrigerator, warmed it up and it became just as fluffy, tender, as fresh out of the oven. Such a pie will also not be out of place on a holiday table. I draw your attention to the shaping of the pie. It is very simple and convenient. No need to roll out two layers and join them together. Serve warm or chilled. Perfect with tea.

    Pour warm water and warm milk into a bowl. Add sugar and yeast. Let it stand for 10–15 minutes. During this time the yeast will activate and foam.

    Melt the butter, let it cool slightly, and pour it into the bowl with milk, water, sugar, and yeast.

    Add the salt and gradually add the sifted flour.

    Knead a soft dough. It should not stick to your hands.

    Cover the bowl with the dough with plastic wrap and place it in a warm place. After an hour to an hour and a half, it will increase in volume.

    While the dough is rising, prepare the filling. Cut the cabbage any way you like. You can slice it into strips or dice it. Place it in a skillet. Add the chopped onion.

    Pour in sunflower oil and a little water. Cover the pan with a lid and simmer the cabbage with onion over medium heat, stirring until done.

    Separate the boiled cod. Remove the bones and place it in a bowl.

    Place the pie in the baking pan seam side down. Make a small hole in the center for steam to escape. Let the pie stand at room temperature for 25–30 minutes, and brush it with egg.

    Bake the pie in a preheated oven at 175‑180 °C for 40‑45 minutes.

    Remove the finished pie and immediately cover it with a towel. When it cools, transfer it to a pot and cover with a lid. The pie is ready. It can be served at the table.
