1. For the dough, mix the sifted flour, cold butter cut into cubes, and a little salt. Place everything in a blender and use it to knead the dough. Add water one tablespoon at a time, adjusting the amount as needed—the dough should be pliable and easy to work with. Gather it into a ball, wrap in plastic wrap, and refrigerate for half an hour.

2. Shape the dough into a flat base, spread it evenly in the pan, creating edges and small holes. Place the crust in a preheated oven at 200°C (392°F) for 10 minutes (with a weight on top), then bake for another 5 minutes (without the weight). Slice the eggplants into rounds, sprinkle with salt, and let sit for about 15 minutes to remove any bitterness. Then rinse them and dry with a paper towel.

3. Prepare the filling: mix the chopped herbs, spices, garlic, cheese, and grate it on a grater with the egg and cream. Mix everything well.
