
Orange and Olive Oil Cake
Description
The pastry is simple and quick to prepare. This juicy pie is perfect served with honey-orange jam, a recipe for which you will also find below. It can be served with tea or coffee.

1. Preheat the oven to 175 degrees. Grease a pie pan with oil. Grate the zest from 2 oranges and place it in a bowl with sugar. Using your fingers, mix the ingredients together. Take the remaining orange. Cut off the bottom and top on a cutting board. Remove the peel, extract the orange segments from the connective membrane, and place them in the bowl.

2. Repeat the same with the second orange. Separate the segments into smaller pieces with your fingers and set aside. Cut the remaining orange in half and squeeze the juice into a measuring cup. You should get about 1/4 cup of juice.

3. Add buttermilk or yogurt, making 2/3 cup of liquid mixture. Pour the mixture into the bowl with sugar and whisk well. Add eggs and olive oil, then whisk again. In another bowl, mix flour, baking powder, baking soda, and salt. Gently add the dry ingredients to the wet mixture. Add orange slices. Pour the batter into the prepared pan.

4. Bake the pie for 50-55 minutes, until golden brown. Let cool on a rack for 5 minutes, then remove from the pan and cool to room temperature.

5. Serve with whipped cream and honey-orange jam, if desired. To prepare the jam, peel the oranges according to the instructions above, add 1-2 teaspoons of honey, let stand for 5 minutes, and gently stir.
