
Quince Pie with Kefir
Description
The pastry is easy and quick to make. A fluffy and airy kefir cake pairs perfectly with caramelized quince. The pastry will bake through well even on the inside; the main thing is not to bake it at a high temperature! To help the batter rise during baking, do not arrange too dense a layer of sliced quince. It can be served with tea or coffee.

Prepare the specified ingredients.

Thoroughly wash the quince in water using the rough side of a sponge, rinsing off the fuzzy layer. Cut it into four parts and remove the seed cores. Slice the quince into a saucepan or cauldron and immediately drizzle with lemon juice so the slices do not darken. Add half a cup of sugar.

Place the container on the stove, adding 1–2 tbsp of water, and simmer over medium heat for about 10–15 minutes, until the sliced pieces become slightly soft. Turn off the heat and leave the slices to cool in the syrup for about 30–40 minutes.

Beat the chicken eggs with salt and the remaining sugar into a fluffy foam for about 3–5 minutes at high speed using a mixer or food processor.

Pour in kefir of any fat content and add baking soda. Preheat the oven to 180 degrees.

Add the wheat flour and whisk it into the batter with a whisk or a silicone spatula. Grease the baking dish with vegetable oil.

Place the dough into the pan and smooth its surface.

Arrange the caramelized quince slices on the dough, shaking off the syrup from them. Place the prepared piece in the oven for 30–35 minutes.

Bake the pie until golden brown and remove it from the oven. Let it cool slightly and remove it from the pan.

Dust the pie with powdered sugar and serve it, cut into portions.
