
Pie with Adyghe cheese
Description
The recipe won't take much time. Before serving this pie, be sure to brush the top with butter—it will make it even more delicious.

1. Ossetian pie is made from classic yeast dough. If you don't have time to prepare the dough yourself, you can buy ready-made dough. I usually make a no-yeast starter dough: I dissolve yeast in warm water, add a pinch of salt and sugar, then add flour and knead the dough.

2. Mix Adyghe cheese with herbs and spinach; this will be our filling.

3. When our dough has risen, roll out a portion of the dough to a thickness of no more than 1 centimeter.

4. Place our filling in the center and fold the edges toward the center.

5. Shape the pie into a round flatbread, leaving a small "hole" in the center. This allows steam to escape and prevents the dough from cracking during baking. Place the cheese pie into a preheated oven and bake at 180°C (356°F) for 20–25 minutes.

6. Any Ossetian pie should not be overbaked, otherwise it won't be soft. The pie with Adyghe cheese can be served hot or even cold.
