
Apricot kefir pie
Description
Delicious baked goods for the whole family. I used a mixer to make this pie—it's faster—but you can also prepare it with just a spoon. An incredibly simple and tasty treat for any occasion! You can even use frozen apricots when they're out of season. The baking is done. Serve at the table.

Prepare all the ingredients from the list. All ingredients should be at room temperature.

In a bowl, crack the eggs, add salt, vanilla sugar, and regular sugar. Beat with a mixer until fluffy.

Pour in the kefir and odorless vegetable oil. Mix.

Add the sifted flour and baking soda.

Mix until smooth and uniform, with a consistency similar to pancake batter.

Pour the dough into a pan lined with parchment paper or greased with butter.

Wash the apricots, dry them, and remove the pits. Cut into small pieces. Arrange the apricot pieces over the dough. Bake the pie in a preheated oven at 180 degrees for about 45–50 minutes.

Remove from the oven, let the pie cool slightly, then carefully remove it from the pan. Transfer to a serving plate and, if desired, dust with powdered sugar. Serve the pie cooled with coffee, tea, or cold milk.
