
Cottage cheese and kiwi pie
Description
You can use a ready-made cottage cheese mixture for the filling, then the pie will be prepared even faster. Serve warm or chilled. Perfect with tea.

Whisk the eggs with sugar and vanilla sugar into a fluffy foam.

Add melted butter and stir with a spatula.

Sift the flour mixture with starch, salt, and leavening agent. Add it to the butter mixture in portions and quickly knead a soft dough with a spatula.

Place the dough into a flour‑dusted pan. It’s convenient to do this with a silicone spatula. Form low edges. You can prick the dough with a fork so it doesn’t puff up. Bake in a preheated oven at 180 °C for 15–20 minutes until golden brown. Cool on a rack.

For the filling, mix and thoroughly beat the cottage cheese with condensed milk, add the whipped heavy cream, and gently stir with a spatula.

Spread the cottage cheese cream onto the cooled base in an even thick layer.

Place the sliced kiwi rounds on top. If desired, you can pour jelly over the pie.
