Description
Homemade baked goods for tea. A recipe for a cake with coconut cream, rum, pieces of fresh pineapple, and a glaze made of powdered sugar and pineapple juice. An unusual cake inspired by the famous cocktail. Serve warm or chilled. Perfect with tea.

Step 1

1. Cut the fresh pineapple into pieces. Preheat the oven to 175 degrees. Grease a round pie pan with butter and line it with a cut-out circle of parchment paper, then grease the parchment paper with butter.

2. Mix flour, baking powder, baking soda, and salt in a bowl. In a large bowl, beat butter and brown sugar with a mixer at medium speed. Add eggs one at a time, and rum. Add coconut cream and mix. Add the flour mixture in two batches and mix until smooth. Using a rubber spatula, fold in the pineapple pieces. Pour the batter into the prepared pan and smooth the top.

3. Bake until golden brown, 35 to 40 minutes. Let cool in the pan for 10 minutes, then remove to a rack and peel off the parchment paper. For extra flavor, while the cake is still warm, brush it with rum or pineapple juice. Let the cake cool completely at room temperature or in the refrigerator if you don't have time to wait.

4. After completely cooling, place the powdered sugar and salt in a bowl, mix with 1 1/2 tablespoons of pineapple juice, and whisk until a thick glaze forms. Add additional pineapple juice (about a teaspoon or more) if the glaze seems too thick. Pour the glaze over the cooled cake. Serve immediately or refrigerate for 20 minutes to allow the glaze to slightly thicken.
