
Butter pie
Description
The recipe won’t take much time. Children will happily take the pie with them to school, adults—to work. The pastry bakes up quickly and easily; the main thing is to let it cool before slicing. You can cut the pie into two layers and make a colorful cake from it—don’t limit your culinary imagination. Serve cooled or slightly warm.

Prepare the ingredients listed. You may use sandwich butter with 63% fat, but do not substitute spread or margarine for it.

Crack the chicken eggs into the bowl of a stand mixer or food processor. Add salt and granulated sugar. Beat on the highest speed for about 4 minutes until light and fluffy.

Melt the butter in the microwave or in a frying pan, but do not bring it to a boil.

Pour the flour and baking powder into a bowl and gently fold them into the whipped mixture.

Pour the clarified butter into the mixture and stir. Add the butter only after the wheat flour so the egg mixture does not curdle from the heat.

Preheat the oven to 180°C. Put the prepared dough into a baking dish and bake on the middle rack for about 40 minutes. You do not need to grease the dish—the dough already contains fat.

Remove the butter pie from the tin and chill in a cold place for about 1 hour.
