Description
You can substitute ryazhenka in the dough with kefir or sour milk, but it is this dairy product that gives the dough its amazing flavor, fluffiness, and tenderness. Add berries and fruits (combine sour and sweet ones) or raisins, and even the most discerning guests will enjoy your pie. Serve it warm or chilled. Perfect with tea.

1. The dough is mixed very quickly and should have the consistency of thick sour cream. If you make the dough too thick, the finished cake will be tougher (like an overmixed one), so beat the dough for about 10 minutes and don't overdo it with the flour.

2. Mix all the ingredients, gradually adding flour to adjust the desired thickness. Add berries to taste. I particularly love the combination of cranberries, lemon, sweet apples, and nectarine. Choose your filling according to your preference—any fruits or berries will work. Grease the baking pan with vegetable oil and pour the batter into it. Place the cake in a preheated oven at 180°C and bake for about an hour.

3. Fruits should be added not only to the dough itself, but also on top (when the batter is poured into the pan, the remaining berries are arranged on top). After baking, let the cake stand for a while, then remove it from the pan, transfer to a serving plate, and dust with powdered sugar.
