I hope everything turns out great! Serve with tea or coffee.
Instructions
- 1
Step 1

Prepare all the ingredients we need for the pie. Measure out the salt, sugar, and baking soda.
- 2
Step 2

First, boil the rice until half-cooked, then cool it down. Drain in a colander and let the water drain off as much as possible.
- 3
Step 3

Peel and slice the onion into thin half-rings.
- 4
Step 4

Sauté the onion in vegetable oil, then add salt to taste and ground black pepper.
- 5
Step 5

Mix and cool.
- 6
Step 6

Drain the liquid from the fish and slightly mash it. If there are any tough bones in the fish, it's better to remove them.
- 7
Step 7

Now let's prepare the dough. Crack one egg and the egg white from a second egg into a bowl. We'll need the yolk later. Add salt and sugar.
- 8
Step 8

Pour in the kefir, which should be at room temperature.
- 9
Step 9

Mix the egg with kefir, add vegetable oil.
- 10
Step 10

Add the flour mixed with baking soda and citric acid.
- 11
Step 11

And knead a soft, elastic dough. Let the dough rest for 10-15 minutes.
- 12
Step 12

Divide the dough into two parts, one should be slightly larger than the other. From the smaller part, set aside a little more dough to make a decoration for the pie. If you don't need such extras, just divide it into two equal parts.
- 13
Step 13

Roll out both pieces of dough into sheets about 1 cm thick.
- 14
Step 14

Grease the baking sheet with vegetable oil and place the larger dough layer on it. Spread a layer of rice, then place the fish on top, and finish with a layer of onion. Leave the edges of the dough free from the filling.
- 15
Step 15

Cover with the second layer of dough, which should be smaller in diameter. Fold the edges of the bottom layer over the top one and carefully pinch them together.
- 16
Step 16

Cut decorations for the pie from the remaining dough. Brush the pie with egg yolk.
- 17
Step 17

Place in a preheated oven at 200 degrees and bake for 40-45 minutes until golden brown.
