
Blueberry kefir pie
Description
Homemade baked treat for tea. The cake turns out moist thanks to the berries, something between a sponge cake and a semolina cake. All ingredients should be at room temperature. If you're using frozen berries without thawing them, roll them in starch and add directly to the batter. If the blueberries are sour, you can add more sugar or dust the cooled cake with powdered sugar. Serve cooled or slightly warm.

Prepare all the necessary ingredients for making a blueberry kefir pie. Sort through the berries, rinse them, and dry.

Pour kefir into a bowl, add semolina, and mix.

Add sugar to the kefir, mix and let it stand for 30 minutes so the semolina can swell.

Melt the butter, cool it, and pour it into a bowl. Mix everything until smooth.

Mix the flour with the baking powder, sift into the kefir mixture and stir until a smooth batter forms.

Beat the eggs with a pinch of salt into a fluffy mixture. Add the eggs to the bowl with the dough and gently mix until smooth.

Grease the baking pan with vegetable oil and transfer the dough into it. Evenly spread the blueberries over the dough.
