
Pie on a phantum (very high)
Description
Perfectly pairs with tea and coffee. The cake made according to this recipe turns out very tall, thanks not only to the soda but also to the whipped eggs and baking powder. So don't be lazy—whip the eggs with sugar thoroughly and use a good quality baking powder. This cake can be made not only with berries and fruits but also with chopped nuts, dried fruits, poppy seeds, or cinnamon—it always turns out delicious. Baked goods made with vegetable oil and soda remain fluffy and tender for a long time, so feel free to prepare this cake in advance. Serve with tea or coffee.

1. Beat the room-temperature eggs with a mixer for 3 minutes until fluffy. Add all the sugar and beat with the mixer for 4–5 minutes until fully dissolved.

2. Add vanilla, vegetable oil, and part of the flour, mix well. To the second part of the flour, add baking powder, mix and gradually add to the dough.

3. Add the soda and mix with a blender until smooth. Line a 25x29 cm pan with parchment paper. Spread a portion of the batter over the bottom of the pan.

4. Place the squeezed fruits or berries on top, then spread the remaining batter and arrange the rest of the fruits or berries on top.

5. Bake the pie in a preheated oven at 180°C for 40-45 minutes. Dust the cooled pie with powdered sugar.
