
Onion pie
Description
Perfectly pairs with tea and coffee. The main feature of this pie is its filling, which is very tender, aromatic, and delicious. The filling makes up the majority of the pie, while the dough serves merely as a base. You can slightly vary the spices and dried herbs added to the filling, for example, by adding some basil or red pepper. Note that the onions need to be simmered for about 40–60 minutes and then thoroughly cooled. Serve with tea or coffee.

1. Sauté the chopped onion in vegetable oil, stirring occasionally. Meanwhile, mix the sour cream (20-22%) and egg until smooth. Rub the cold butter, sifted flour, and salt into crumbs.

2. Add the egg-sour cream mixture and quickly knead the dough. Transfer the dough to a plastic bag, flatten it, and refrigerate for 30 minutes. Place the prepared onions in a bowl and let cool.

3. Prepare the filling: lightly beat the eggs with a whisk, add sour cream, salt, dried oregano, basil, and black pepper. Mix with the cooled onions and grated hard cheese.

4. Roll out the dough into a sheet on parchment paper, transfer it to a baking pan, and smooth the edges. Place the filling onto the dough base and bake the pie in a preheated oven at 190°C for 40 minutes.

5. Leave the pie in the pan for 15 minutes, then transfer it to a board and let it cool completely.
