
Pie for New Year 2023
Description
Delicious baking for the whole family. You can serve and lay out a New Year’s feast in all kinds of ways. The coming year 2023 will arrive under the Black Water Rabbit — an animal whose diet is purely plant-based. With that in mind, I chose cabbage for the filling, but you can bake the pie with whatever filling you like best. I also want to mention the dough on its own — it’s simply incredible. Not only is it wonderfully easy to work with, but whatever you make from it turns out tender and light as a little cloud. You must try it.

Prepare all the ingredients.

In a deep bowl, combine warm milk, egg, butter, sugar, and yeast. Mix and let stand for 10 minutes.

Then add salt and incorporate the flour in batches. Knead a soft, slightly sticky dough.

Gather the dough into a ball, brush with vegetable oil, cover the bowl with plastic wrap and leave in a warm place for about 1.5 hours.

The dough should rise to nearly double its size. Once risen, punch it down and let it proof for another 40 minutes.

In a frying pan heat the oil, then add grated carrot and diced onion. Sauté the vegetables until softened. Then add shredded cabbage, salt and pepper to taste. Braise covered, stirring occasionally, until the cabbage is cooked to your liking. The filling is ready.

The risen dough must be punched down once more, then divided into portions. You will need pieces for the body, head, ears, paws, and snout.

Roll out each piece of dough one by one into a circular or oval shape, depending on the purpose, place the filling in the center, pinch the pies along the seam and place them seam-side down. Form the body of the rabbit from the largest pie, and make the head from a slightly smaller pie. Shape them as needed with your hands. The dough is very pliable and easy to work with.

From two slightly smaller patties, attach ears to the head.

Then use slightly smaller pieces to shape the rabbit’s paws. Their shape and size can vary—as can the rabbit’s overall appearance—everything is entirely up to your imagination.

Roll the remaining, smallest pieces of dough into balls and shape them into cheeks and a little nose. Cover the shaped piece with a towel and leave for 20 minutes.

Then brush the dough with egg yolk and bake in an oven preheated to 180 degrees for about 30 minutes. The top should turn golden brown.

The "Rabbit" pie for New Year 2023 is ready. Before serving, attach eyes to the rabbit made from olives, and cut out teeth from egg white.

You can serve the pie in lots of different ways. I like it with garlic or cheese sauce—it works beautifully not only with vegetables but also with mushrooms, meat, fish, or poultry. Or you can simply serve the pie as a bread substitute with soups or hot mains. Happy New Year, and
