Description
The "Kosa" pie turns out unusually fluffy, tender, and tasty. In texture, the dough resembles an Easter cake. For the filling, you can use fresh, frozen, or dried cherries. In the first two cases, remove the pits and place the berries in a sieve so the juice drains well. With dried cherries, there will be no such problems. Overall, the bake is simply perfect—aromatic, tender, and airy. It can be served with tea or coffee.

Prepare the pastry dough. Crack an egg into a bowl.

Pour in warm milk.

Beat the egg with milk as you would for an omelette.

Add sugar, yeast, and melted butter.

Add the salt and sifted flour.

Knead a soft, elastic dough that doesn’t stick to your hands.

Cover the bowl with the dough with plastic wrap and place it in a warm spot for an hour to an hour and a half. After this time the dough will rise and be ready to use.

Divide the dough into three equal parts.

Roll each portion into an elongated sheet. Add sugar to the cottage cheese to taste and mix. In two layers place the cottage cheese, and in the third layer place the pitted cherries. To prevent the cherry juice from leaking out, sprinkle the dough with starch.

Cover the filling with dough as shown in the photo. Roll each layer into a log. You will get three rolls – braids for a plait.

Weave a braid from three cords.

Place the braid in a baking pan.

Let the pie stand in a warm place for 25–30 minutes until it expands. Then brush it with beaten egg and place it in the oven preheated to 175–180 °C.

Bake the pie for 40-45 minutes. Baking time depends on your oven.
