Prepare all the ingredients.

Soak the green buckwheat in water for 6–8 hours beforehand. It’s convenient to do this overnight.

Then rinse the buckwheat thoroughly in water several times and drain in a colander. Let the excess liquid drain off.

Peel the banana and slice into rounds.

Place green buckwheat, black currants, banana, salt, and Jerusalem artichoke syrup in a blender.

Process until smooth.

Transfer the resulting mixture into a bowl. Add coconut urbech and vanilla extract. The coconut urbech should be liquid; melt it beforehand if needed.

Add the baking soda. Mix again.

Place the dough in a baking pan. If you are not using a silicone pan, be sure to grease it with vegetable oil or line it with baking parchment paper. Bake the pie in a well-preheated oven at 180°C for 30–35 minutes.
