Pumpkin pie in a multicooker
Description
The baking is simple and quick. This pie uses pumpkin puree. It's best to bake a piece of pumpkin in the oven or microwave so it doesn't absorb excess liquid. Warm pumpkin can easily be peeled and mashed with a fork. The resulting pie is moderately sweet, bright in flavor, and has a moist, crumbly texture. Baking in a multicooker requires a higher amount of leavening agent and does not tolerate excess moisture. Serve with tea or coffee.
Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

Set aside one tablespoon of sugar in the cottage cheese. Beat the butter with sugar until fluffy.
- 3
Step 3

Add the eggs one at a time, beating well after each addition and scraping the mixture from the sides of the bowl.
- 4
Step 4

Add the pumpkin puree and mix with a spatula.
- 5
Step 5

Add the semolina, mix well, and let it stand for 10 minutes to allow the semolina to swell.
- 6
Step 6

Mix the flour with baking soda, salt, and baking powder. Add to the pumpkin mixture and quickly stir.
- 7
Step 7

Pour in the vinegar and stir, add the raisins and gently mix the dough once again.
- 8
Step 8

Pour the batter into the multicooker bowl, placing a circle of parchment paper on the bottom for reliability.
- 9
Step 9

Mix the cottage cheese with a spoonful of sugar and starch. Spread it over the dough. Baking in a multicooker is usually pale on top, and the cottage cheese will mask this.
- 10
Step 10

Bake for 1 hour using the "Bake" setting. Do not open the lid. Let it stand for another 10 minutes using the "Keep Warm" setting. Then turn off the multicooker and open the lid. The edges of the ready cake should pull away from the sides, and a wooden skewer inserted into the cake should come out dry.
- 11
Step 11

Remove the pie using the steaming basket insert and place it on a cooling rack. Cool the pie to your desired temperature.
- 12
Step 12

The warm pie is very good with milk. And when cooled, even better if it's yesterday's — it slices thinly, is juicy, and pairs perfectly with a cup of tea.
- 13
Step 13

Remove from the oven and serve warm or cooled.
