
Puff pastry pie with tomatoes and basil
Description
The bake comes together simply and quickly. Tomatoes are my favorite vegetable. In summer, when there are plenty of fresh, truly tasty tomatoes, I try to cook as many dishes as I can with this vegetable. A puff pastry pie with tomatoes and basil is one of them. If the tomatoes are really ripe and flavorful, you needn’t doubt it—the pie will turn out wonderfully delicious. Serve cooled or slightly warm.

Thaw and roll out a sheet of puff pastry to the desired thickness. From a standard sheet of dough I got a rectangle about 30 by 20 cm.

Cut off the edges of the dough—we’ll make the sides from them. About 1.5 cm wide.

Like this—you get four-sided dough and four trimmed strips.

In a small bowl, beat the egg.

Brush the dough sheet with beaten egg.

Shape the rim from the trimmed dough scraps, cutting off any excess. Brush the rim with egg as well.

Since the dough is puff pastry, prick it with a fork almost all over the surface. This keeps it from puffing up in the oven.

Place the dough in an oven preheated to 200°C and bake for about 13–15 minutes until golden brown.

Take the baked dough out of the oven and cool it on a wire rack.

Meanwhile, while the dough bakes, we’ll make the filling. On low mixer speed, lightly beat the cream cheese.

Add the pesto and keep whisking.

Add the milk and whisk thoroughly until the mixture is almost smooth and even.

Wash the tomatoes and slice them into rounds.

Spread the creamy mixture over the dough.

Arrange the tomatoes overlapping.

Drizzle with olive oil.

Season with salt and pepper, add any other spices you like, then put the dish in the oven and bake for a further 20–25 minutes at 180°C (until cooked through).

Meanwhile, while the pie is baking, finely chop the fresh basil.
