
Lavash pie
Description
The pastry is simple and quick to prepare. You'll need thin Armenian lavash for the pie. The filling can be any kind—I'm using stewed cabbage today. The pie turns out tender, juicy, and very delicious. It can be served with tea or coffee.

Prepare all the ingredients.

Sauté the onion and carrot until soft. Add the shredded cabbage and cook until done. At the end, season the filling with salt and pepper to taste.

In a deep bowl, beat the eggs with salt, baking soda, and kefir.

Cut the lavash into squares using kitchen scissors, and add the lavash to the kefir mixture. Mix and then remove enough pieces to fully cover the bottom of the baking dish.

Add the stewed cabbage to the lavash and mix until evenly distributed. It's convenient to do this with your hands rather than a spoon.

Grease the bottom of the pan with oil and line it with previously soaked lavash pieces, placing them tightly against each other. Then transfer the remaining mixture into the pan and cover the sides with the lavash pieces used earlier to line the pan. Bake in a preheated oven at 180°C for 40–50 minutes. Judge by appearance. If the top begins to burn, cover it with foil.

The top of the finished lavash pie can be brushed with a piece of butter. The lavash pie is ready.
