Prepare the necessary ingredients: sift the flour, melt the butter, mince the ginger, pour boiling water over the raisins and let them soak for 20 minutes, then drain in a sieve. Dissolve the yeast and 1 tablespoon of sugar in warm milk. Set aside in a warm place for 10–15 minutes until a foamy layer forms on top. Sift the flour, make a well in the center, and add sugar, egg, yeast mixture, and salt. Knead the dough until it no longer sticks to your hands. Place the dough into a greased bowl, cover, and set in a warm place to rise for 1–1.5 hours.

The dough has doubled in size, and the indentation made by pressing with a finger does not spring back.

Divide the dough into 2 parts. Roll out one part into a thin sheet and brush it with melted butter, then sprinkle with 1 tsp sugar, cinnamon, and pine nuts. Cut into several strips.

Preheat the oven to 180 degrees. Brush the top of the risen "accordion" with butter and sprinkle with cinnamon sugar, if desired. Bake the cake for 25–30 minutes, adjusting according to your oven.
