Description
Perfect with tea and coffee. The cake turns out tall. The baking time is given based on the pan diameter. Therefore, when increasing or decreasing the pan diameter, watch the baking process, as the time may vary longer or shorter. By following the recipe and being careful with the process, you will achieve the best result. Serve warm or chilled. Perfect with tea.

Prepare the necessary ingredients.

Blend the kissel in a blender.

Separate the eggs into whites and yolks. Put the whites in the refrigerator.

Beat the yolks with sugar (7 tbsp).

Add the softened butter in parts. Each time, beat the mixture well.

Add the flour mixed with baking powder in several additions. Stir well.

Knead a soft, non‑sticky dough.

Divide the dough into three parts. Use a scale so the layers will be proportional. Add cocoa to one part and mix it well. A slight crumbliness of this part is acceptable.

Wrap all three parts in plastic wrap and place them in the freezer.

Separate the egg whites, add a pinch of salt and beat until light foam forms. Then gradually add 4 tbsp of sugar, beating into a fluffy foam.

Preheat the oven to 180 °C. Take a removable round pan with a diameter of 24 cm or a square one – 23 cm. Line the bottom and sides with parchment paper.

Take one portion of the light dough out of the freezer and grate it into the mold using a coarse grater. Distribute evenly.

Using a spatula, gently spread the jam.

Take the dark dough out of the freezer and grate it on a coarse grater onto the layer with jam.

Spread the protein‑gelatin portion over the layer of dark dough.

Take the last portion of the light dough out of the freezer. Grate it over the egg part. Spread it in an even layer. Place the prepared pie in a hot oven preheated to 180 degrees. Bake for 50–65 minutes. If you are using convection, 55 minutes is enough for baking the pie. check doneness with a wooden skewer.
