
Berry Yeast Pie
Description
Homemade baked goods for tea. You can make this pie using my recipe not only with berries, as you understand. Any fruits, jam, preserves, or jelly will work great. Of course, you can also make it savory, for example, with cabbage. If you choose a dry filling, I recommend covering the pie with a second layer of dough. Then it will be a closed pie.

Step 1

Dissolve dry yeast in a small amount of warm water. Add 1 tablespoon of sugar. Place the starter in a warm spot near a radiator, covering it with a towel. Let it rise well, forming a fluffy foam on top.

Break the eggs. Set aside one yolk for brushing. Add sunflower oil, half a cup of sugar, a good pinch of salt, and vanilla. Mix with the sponge. Sift in the flour and knead an elastic dough. Place it in a warm spot to rise.

When the dough has risen, knead it down, detaching it from the sides so it deflates. Once the dough rises a second time, it's ready to use. Place it onto a floured surface and divide it into two parts: one larger and one smaller. Take a rolling pin and roll out each part slightly, being careful not to damage its fluffiness. Cut the smaller circle into strips. Grease the baking form. Place the larger piece of dough into the form, then add frozen berries on top. Cover the pie with the strips, sealing the edges. Brush the strips with beaten egg yolk.

Press the berries slightly into the dough. Place the pie in the oven at 150 degrees for one hour. Once ready, take the pie out of the oven and cover it with a towel to prevent it from drying out. Serve hot or cold.
