Prepare the ingredients.

Place the flour and cubed butter in the mixer bowl, process until crumbly, add a pinch of salt. You can also do this by hand with a kitchen knife.

Whisk the egg yolks with 1/3 of the granulated sugar.

Pour the beaten egg yolks into the flour mixture and knead the dough.

Divide the dough into two unequal parts; put the small part, weighing about 80–90 grams, in the freezer until it freezes solid.

Prepare a baking pan; a springform pan works well. Line the bottom with parchment paper, grease with butter, and dust with flour. Spread the dough evenly in the pan and shape the sides to a height of about 3–4 cm. Prick the bottom with a fork.

Peel the apples and grate them on a coarse grater.

Spread the apple filling into the prepared pan.

Beat the egg whites into a fluffy foam, add sugar and vanilla sugar, and beat until light and fluffy.

Sprinkle the top of the pie with pastry crumbs. Bake in an oven preheated to 190°C for 35–40 minutes; if the pie starts to brown too soon, cover it with foil.
