
Meat and Mushroom Upside-Down Pie
Description
The pastry is simple and quick to prepare. While in a regular pie the filling is placed on top, in this version all the filling sits at the bottom of the pan. Then the pie is flipped over and served upside down. Turnover pies can be made with various fillings; this time I used mushrooms, ground meat, rice, and cheese. Serve cooled or slightly warm.

1. Wash the mushrooms and slice them (any kind will do). Fry the mushrooms in sunflower oil until the liquid evaporates, then season with salt and pepper to taste.

2. Peel and wash the onion, then chop it into cubes and sauté in a pan with vegetable oil. After that, add the ground meat, break it up with a spatula, and season with salt and pepper.

3. For the dough: in a bowl, beat the eggs with salt and sugar, then add 50 grams of vegetable oil, kefir, and baking soda, mixing well after adding each ingredient.

4. Combine the flour with the baking powder and sift into the liquid ingredients. Mix the batter with a whisk until no lumps remain; the consistency should be similar to that of pancake batter.

5. Line a baking dish with parchment paper and grease it with vegetable oil. Place the mushrooms on the bottom, then grate the hard cheese on a coarse grater and add it to the mushrooms.

6. Next, add a cup of rice as the next layer, spreading it evenly over the entire surface.

7. Place the fried meat mince with onions on top of the rice and spread it evenly.

8. Spread a small amount of frozen vegetable mix over the meat mince.

9. Pour the batter into the mold and bake in a preheated oven at 170-180 degrees for 1 hour.

10. Remove the pie, let it cool for about half an hour, then cover it with a tray and flip it over. The finished pie can be eaten hot or cold.
