
Upside-down pie with kiwi and pine nuts
Description
There are many recipes for such pies, and I want to suggest you make an upside‑down tart with kiwi and pine nuts. The bake, without exaggeration, turns out simply exquisite in taste! A minimal set of ingredients, yet the result is superb. A thin layer of delicate shortcrust pastry with a fragrant filling of caramel and nuts and a light fruity tang of kiwi. This dessert will please any sweet‑tooth! My pan is 18 cm in diameter; for a larger pan you should increase the amount of ingredients. Try it. It can be served with tea or coffee.

Prepare all the ingredients.

Beat the egg with 40 g of sugar.

Add 70 g of soft butter and mash with a fork.

Add flour and a pinch of salt.

Knead a soft dough. If necessary, you can add a little more flour; the dough should not stick to your hands. Gather it into a ball, wrap it in plastic wrap, and place it in the refrigerator for 30 minutes.

Peel the kiwi and slice it into fairly thick rounds.

In a dry skillet caramelize the remaining sugar (melt it to a golden color), add 25 g of butter, stir and add pine nuts. Remove from the heat and transfer to a butter‑greased, parchment‑lined baking pan.

Spread the kiwi slices on top.

Take out the dough and roll it into a circle slightly larger than the pan. Cover the filling with the dough and fold the edges inward.
