
Pico de gallo

It works for a holiday and for every day. What to serve pico de gallo with—you’ll work that out once you try making it. To my mind, the ideal match is with grilled meat (steaks, kebabs, etc.). Then again, you don’t have to serve pico de gallo with anything—you can just eat it as a light snack during the day. The pico de gallo recipe goes like this: 1. In a medium bowl, mix finely chopped tomatoes and onion (I dice them to about 0.5 cm). 2. Peel, mince finely, and add the garlic to the bowl. 3. Remove the seeds from the hot pepper (be careful, use gloves), chop finely, and add to the mixture. 4. Chop the cilantro and add it to the dish. Don’t hold back—add as much cilantro as you like; I personally add a lot because I love herbs. 5. Squeeze the juice of one lemon into the dish, add salt and pepper. Stir—and that’s it, pico de gallo is ready. Serve the appetizer at the table.
