
**Piquant Beet Mousse with Herring**

Prepare the ingredients for the mousse. Bake the beet in the oven wrapped in foil, let it cool, then peel it. Dissolve the gelatin (I used quick-dissolving) in a small amount of boiling water; I added literally just a couple of tablespoons of water.

Cut the beet and herring into several pieces, put all the ingredients (except the gelatin) into a food processor. Run the appliance for 4–5 minutes.

The mixture should be thick and homogeneous. Pour in the dissolved gelatin and run the blender again for a couple of minutes.

Mousse is ready.

Take any silicone mold or glass ramekins, pour in the mousse, and refrigerate for 3–4 hours to set.

The mousse releases from the silicone mold very easily—you don't even need to heat it. Garnish the mousse with herbs; if your molds are small and you don't have lettuce leaves, serve the mousse on apple rings or salted crackers.
