
Spicy tartlets with cottage cheese filling
Description
Perfect for tea and coffee. 1. Grate hard cheese on a fine grater. 2. Add one squeezed garlic clove and one tablespoon of starch to the cheese, mix gently. 3. Place the cheese mixture onto a dry skillet, one tablespoon at a time. 4. Heat the skillet and wait until the cheese melts. Remove from heat and let the cheese pancakes cool slightly (but not too much), just enough so you can lift them with a spatula. 5. Drape the warm cheese pancakes over the bottoms of inverted shot glasses (if you use larger glasses, you'll get very big tartlets). Press them gently with your hands against the glasses, shape the edges, and let them cool. 6. Once cooled, remove the tartlets from the glasses and fill them with the filling. Don't overfill—just one teaspoon is enough. 7. FILLING: Blend feta cheese (or brine cheese, or cottage cheese) in a blender. Add diced avocado, chopped cilantro, lemon juice, season with pepper, mix well, and spoon one teaspoon of filling into each tartlet. I didn't add garlic to the filling since it's already in the cheese tartlets. Optionally, you can add finely chopped tomatoes. Garnish the filled tartlets with fresh herbs and serve to delight your guests. Serve warm or chilled. Perfect with tea.
