2. Place all the flour, two pinches of salt, thyme, and cold butter into the blender jar. Turn the blender on for a couple of minutes. When crumbs form, gradually start adding water without turning off the blender. As soon as the dough comes together into a ball, it’s ready. You may need 80 to 100 ml of water.

3. The dough is ready. Remove it, shape it into a ball and place it in the refrigerator for 30 minutes, wrapped in plastic wrap.

4. For the filling, grate all the cheese on a coarse grater.

5. In butter, sauté the onion until cooked through. Combine the cheeses with the onion, eggs (if large, one is enough), and cream. Add ground coriander, salt, black pepper, and anise (optional). Mix.

7. Divide the dough into portions according to the size of your molds; I baked in two small ones, if they are small you’ll need about 4–6 pieces. Roll out the dough, place it in a greased pan, and prick it with a fork so the dough doesn’t puff up during baking.

8. Divide the filling so that there is enough for all the molds. Bake the cakes in a preheated oven at 180°C for 30–40 minutes, depending on the size of the cakes.
