Spicy turkey with aromatic couscous

Description

Couscous is very convenient as a side dish. This grain readily absorbs any additions—from spicy to sweet—and pairs well with a wide variety of flavors. Its uses are limited only by your imagination.

    You can choose a spice mix to your taste or use a ready-made one. I mix rosemary, celery leaves, basil, and parsley in equal proportions, adding chili flakes and whole black peppercorns. This time I also added some smoked paprika. Combine the spices with oil, salt, and syrup to form a paste-like mixture.

    Rinse the turkey pieces and dry them well. Rub the meat thoroughly with the spice mixture, then place in the multicooker bowl.

    Bake at 120 degrees, turning and browning on all sides. Then add a couple of tablespoons of boiling water and simmer for half an hour, or until the meat becomes tender.

    Remove the turkey and wrap it in foil. Keep it hot.

    Cut the apples into small pieces and slice the leek into rings.

    Place in the remaining liquid left in the multicooker from stewing, pour with lemon juice, and add grated fresh zest. Simmer for 3 minutes.

    Add the nuts and corn. Simmer for another 3 minutes.

    Add the couscous and mix well. If necessary, add a little boiling water—the couscous should be well moistened, but there should not be too much excess liquid. Add a pinch of salt and mix again. Set the multicooker to the "Keep Warm" mode for 10 minutes to allow the couscous to steam thoroughly.
