
Pide with cheese and egg
Description
The pastry is prepared simply and quickly. You can easily and quickly make Turkish flatbread pide using this recipe. First, knead a yeast dough, and while it is rising, prepare the cheese filling. The dough for pide should be rolled out very thin. Spread the filling on the middle of the rolled-out dough, fold the edges, and bake in a preheated oven until done. The pastry is ready. Serve at the table.

Prepare all the necessary ingredients. The water for the dough should be warm.

First, activate the yeast. Pour 100 ml of warm water into a deep bowl, add the yeast. When the yeast dissolves, add a teaspoon of sugar, stir, cover with a damp towel and let it sit for 15–20 minutes.

Then add salt to the bowl and gradually pour in all the flour. Add the remaining water; you may need more or less water, so add it slowly. Knead a firm dough.

Roll the dough into a ball, place it in a bowl and cover with a damp towel. Let it rest in a warm place for 30 minutes.

In the meantime, prepare the filling. Grate the mozzarella on a coarse grater, add cottage cheese, thyme, pepper and minced garlic. Mix. If needed, add a little salt.

Divide the dough into two equal parts. Roll it out thinly in an oval shape.

Place half of the filling in the center, leaving the edges free.

Fold the edges of the dough so that it takes the shape of a rook.

Make a depression in the middle and crack an egg into it. Slice the tomatoes into rounds and place them on top of the filling.

Bake in a preheated oven at 220 °C for 20–25 minutes. Serve the pide hot.
