Description

Homemade baked goods for tea. The filling for pide can be any you like. Add more vegetables or cheese, your favorite spices. Let your imagination run wild.

    For the dough, mix sifted flour with yeast, salt, and sugar, and add half of the vegetable oil. While pouring in a warm mixture of milk and water, knead a soft dough. Knead the dough well, gradually adding the remaining oil.

    Roll the dough into a ball and transfer it to a buttered bowl. Cover the bowl with plastic wrap and let the dough rise in a warm place until it doubles.

    For the filling, mix the ground meat with finely chopped onion and thinly sliced leek. Add finely chopped pepper and diced peeled tomatoes. You can simply add minced lecho with a small amount of tomato sauce. Generously season the meat with spices and salt to taste. Mix well.

    Divide the dough into pieces about the size of an average apple and roll them into balls.

    Roll each ball into a long oval and spread the filling. Fold the edges of the dough and pinch the pides into a boat shape.

    Place the pides on a baking sheet lined with parchment paper and brush them with an egg yolk mixed with milk. Let them rest and bake in a preheated 200 °C oven until golden brown.

    Let the pastries cool slightly on the baking sheet, then transfer them to a plate and cover with a towel so they soften a bit.

    Serve the pide hot with fresh vegetables. You can also serve a yogurt‑based garlic sauce or a tomato one separately.
