
Pizza (sauce)
Description
Universal dressing for salads and hot dishes. There are two main types of sauce: white (creamy) and red (tomato-based). All other variations are based on these two. You can make the sauce more piquant or mild, spicy. The sauce can be prepared in advance and stored in the refrigerator. You can use fresh or canned tomatoes. This is a pizza sauce, but it also works perfectly for other dishes: pasta, stewed meat, or vegetable ragout. Ideal for pasta, meat, and vegetables.

Peel the garlic and chop it finely with a knife or grater. Peel the onion and finely chop it.

Heat a skillet with olive oil, first add the onion and sauté for 1-2 minutes, then add the garlic.

Pour in the broth (chicken or vegetable), scrape the bottom of the skillet with a spatula and mix the contents.

Cook until the liquid reduces by half, then add the chopped canned tomatoes (you can substitute with fresh tomatoes, peeled).

Season to taste with salt, pepper, sugar, oregano, and chopped basil leaves, stir the sauce with a spoon, and simmer over low heat for about half an hour.

Use the ready sauce immediately for pizza or let it cool, then transfer to a jar for storage in the refrigerator.
