
Asparagus and Onion Pizza
Description
The recipe won't take much time. This recipe yields 1 thin 30 cm diameter pizza. Serve warm or chilled. Perfect with tea.

1. Grate or cut the mozzarella into small cubes. Thinly slice the shallot. Preheat the oven to 260 degrees. Place the baking sheet in the oven. Prepare the asparagus. Lay it on a cutting board and, using a knife (a Y-shaped peeler works best here), shave the asparagus into long, thin strips, moving from the base towards the tip of the stalk.

2. Repeat with the remaining stalks, and don't worry if some pieces end up slightly uneven in thickness—mixed textures will add an interesting flavor to the pizza. Toss the asparagus with olive oil, salt, and pepper in a bowl.

3. Roll out the pizza dough into a 30 cm circle on a surface dusted with flour or cornmeal. Transfer to a floured baking sheet. Sprinkle the dough with Parmesan and Mozzarella cheese, then arrange the asparagus on top.

4. Bake the pizza for 10 to 15 minutes, until the edges are browned, the cheese is bubbling, and the asparagus tips turn brown. Remove from the oven, immediately sprinkle with green onions, then slice and serve.
