
Pizza with pesto sauce and egg
Description
Homemade baked goods for tea. A traditional sauce based on olive oil, fresh basil leaves, garlic, pine nuts, and cheese can be made at home. You do not have to stick to the classic version. Instead of basil, you can use any mix of greens: arugula, parsley, spinach, or wild garlic. You can also replace pine nuts with almonds, walnuts, or Brazil nuts. Serve chilled or slightly warm.

To make the pizza, prepare the dough. It’s best to make it ahead of time. To prepare sourdough dough, gather the ingredients from the list.

Pour water into a container and add the starter at peak activity. Mix the active 50% hydration starter into the water. Add the salt, honey, and vegetable oil.

Sift the wheat flour and add it to the liquid ingredients of the dough. Knead the dough until it is uniformly smooth in texture.

Kneading the dough is easier with a stand mixer and the dough hook attachment.

Remove the dough from the stand mixer bowl, fold it envelope-style, and transfer it to a container greased with vegetable oil. Cover the container with plastic wrap and refrigerate overnight to proof. If you plan to use the dough right away, let it rise at room temperature.

After proofing in the refrigerator for 12–16 hours, the dough will rise enough and be covered with air bubbles.

At this stage, you can shape individual breakfast pizzas. Prepare the ingredients for the pizzas. You can use store-bought commercial pesto or make homemade pesto. Use small eggs, category 2. Ricotta can be used instead of feta.

Divide the dough into three equal parts. Shape each portion of dough into a flatbread and place on parchment dusted with flour. Grate the cheese and place a handful in the center of each flatbread, pressing it lightly into the dough. Sprinkle the cheese with chili flakes on top. Bake the bases in an oven preheated to 200–230°C for 8–10 minutes.

For volume and a fresh taste, mix the pesto with fresh cucumber or zucchini grated on a grater and squeezed to remove excess moisture.

Spread pesto on the baked pizzas and spread it evenly over the entire surface of the flatbreads. Crumble feta cheese over each pizza.

Fry sunny-side-up eggs over low heat for about 3–4 minutes, until the white is fully set and the yolk stays runny.

Place one sunny-side-up egg on each pizza. Sprinkle the tops with chopped parsley.
