
Pizza with mushrooms
Description
Perfectly pairs with tea and coffee. The dough requires neither milk nor eggs—flour, water, and yeast are quite sufficient. However, I recommend using olive oil specifically, as this is what makes the pizza almost like in Italy. Also, don't overdo the filling. Serve cooled down or slightly warm.

Prepare the ingredients.

Mix the sifted flour with salt and dry yeast. Add two tablespoons of olive oil. Gradually pour in warm water and knead a firm yet tender dough.

Coat your hands with the remaining olive oil and knead the dough thoroughly. It should become completely smooth and no longer stick to your hands.

Let the dough rise in a warm place, covering it with a towel. The volume should triple.

With your hands, stretch the dough over your pan, lightly greasing the pan with oil. The dough is pliable and spreads easily by hand.

Brush the dough with tomato sauce. It's convenient to do this with a brush.

Sprinkle the pizza base with grated mozzarella, spreading it in an even layer.

Place thinly sliced mushrooms, quartered tomatoes, and thin onion rings on top of the cheese. Season with pepper to taste. However, I don't recommend adding salt—it will create excess moisture.

Finish off by sprinkling half of the grated Parmesan over the pizza, add oregano and thyme, and drizzle lightly with olive oil.

Bake the pizza in a well-heated oven at 270 degrees for about 15 minutes. Keep an eye on your oven. Transfer the cooked pizza onto a cutting board and let it rest for a couple of minutes.

Then sprinkle with the remaining Parmesan, drizzle a little more olive oil, garnish with fresh basil if available. And serve, serve immediately while it's still warm!
