
Pizza with Zucchini and Mozzarella
Description
Ideal for tea and coffee. A wonderful vegetarian pizza is prepared very quickly and easily. By analogy with zucchini ribbons, you can also decorate the pizza with sliced pumpkin or asparagus ribbons. With this recipe you will get one round pizza with a diameter of 30 cm. The dish goes well with a glass of cold wine or cold beer.

1. You can make pizza dough yourself or buy ready‑made in the store. Preheat the oven to 250 °C. Shape the dough into a thin circle 30 cm in diameter. Place the circle on a baking sheet lightly dusted with cornmeal (this will prevent the dough from sticking).

2. Spread the dough with tomato sauce, distributing it evenly. Top with thinly sliced mozzarella cheese. Mozzarella melts and spreads a lot, so do not add too much cheese. Place the pizza in a preheated oven and bake for 12-15 minutes, or until the edges of the pizza become golden‑brown.

3. Meanwhile, trim the ends off the zucchini and, using a vegetable peeler, slice the zucchini into ribbons. Set aside. In a medium bowl, whisk together red wine vinegar and olive oil using a whisk. Add mustard, minced onion and stir. Season with salt and pepper to taste. Add the zucchini and toss so that they are evenly coated with the mixture.

4. Open the oven and carefully place the zucchini mixture onto the pizza. Bake for 1-2 minutes, until the zucchini are heated through. Sprinkle the pizza with pine nuts and grated Parmesan cheese. Serve immediately with cold wine or beer.
