
Pizza with broccoli, onions, and olives
Description

1. Preheat the oven to 190 degrees. Slice the onion and place it in a small skillet along with thyme (if using) and a pinch of salt. Add enough olive oil. Place the skillet in the oven and bake, stirring occasionally, until the onion turns golden, about 30 minutes.

2. While the onion is cooking, wash and dry the broccoli, trim the large stems and cut the leaves and stalks. You should have about 2 cups. Peel and finely chop the garlic. Heat a large skillet with olive oil. Add the broccoli, season with salt, pepper, and paprika, and sauté over high heat until the broccoli is cooked. Add the garlic and sauté for a few seconds.

3. When the onion is ready, remove it from the oven and increase the temperature to 230 degrees. Roll out the pizza dough into a circle 30-35 cm in diameter and place it on a baking sheet. Lightly brush the dough with olive oil, leaving a 1 cm border dry. Evenly sprinkle with grated Mozzarella cheese, then top with the onion, broccoli, and olives. Drizzle about 1 tablespoon of olive oil over the top.

4. Bake the pizza in the oven for 5 to 10 minutes, until the crust is crispy. Remove the pizza from the oven, drizzle with a few drops of lemon juice, slice, and serve.
