
Pizza with Eggplant and Zucchini
Description

Prepare all the ingredients.

Rinse the eggplants and zucchini, trim off the ends, and slice the vegetables into medium-thick rounds.

Fry the vegetables separately. Start with the zucchini. Heat the oil in a frying pan, add the zucchini, and fry over low heat on both sides for 3–4 minutes; salt to taste.

Then, over medium heat, fry the eggplants as well. If needed, add a little oil at a time. Salt the eggplants to taste.

Slice the tomatoes into half-rings.
