
Eggplant Pizza
Description
Homemade baked goods for tea. Using eggplants as a pizza filling, in my opinion, is simply a brilliant idea, as they have a very distinct, pronounced flavor that pairs perfectly with tomato sauce and cheese. Be sure to try it. The baking is ready. Serve at the table.

Prepare all the necessary ingredients.

First, prepare the dough. Dissolve compressed yeast in warm water (about 30 degrees Celsius), then add salt and sugar. Let it sit for 10–15 minutes so the yeast becomes active.

Now gradually add the flour and knead a soft dough.

The dough turned out beautiful, soft, and not sticky to the hands. Cover it with a towel and let it rest for 30–40 minutes.

Meanwhile, prepare the filling. Slice the eggplants into thin slices and fry them in vegetable oil until golden brown.

Finely chop the onion.

Sauté the onion until soft, then add tomato juice, paprika, pepper, and a little salt. If the juice is too sour, add a tablespoon of sugar. Simmer the sauce until thickened. This sauce is excellent for pizza.

This is how well our dough has risen. Knead it once again, and then you can roll it out.

Roll out the dough into a thin sheet to fit the size of the pan.

Spread the sauce over the dough.

You can optionally add slices of sausage, smoked meat, or other meat filling. But it will be great even without them. Place the fried eggplant slices. I cut them in half to make them easier to arrange.

You can spread a small amount of mayonnaise on top. Finally, sprinkle the pizza with hard cheese grated on a fine grater. Bake the pizza for 25-30 minutes at 200 degrees.
