
Breakfast Pizza with Bacon, Cheese, and Eggs
Description
The pastry is simple and quick to prepare. This recipe makes 2 pizzas, each 30 cm in diameter. Serve warm or chilled. Perfect with tea.

1. The night before, prepare the dough. Add 3/4 cup of warm water to a bowl. Add the yeast, stir, and let stand for 5 minutes. Add the flour and 1 teaspoon of salt, beat at low speed with a mixer for 1 minute. Increase speed to medium and mix for 2 minutes, then increase to high speed and mix until smooth, about 2 minutes. Turn the dough out onto a lightly floured surface, divide into two equal parts, and shape each into a ball. Place on a floured baking sheet, cover loosely with plastic wrap, and refrigerate overnight.

2. Place the dough in a warm spot 1–2 hours before baking. Preheat the oven to 260°C for 30 minutes, placing the baking tray on the lower rack. Prepare the filling. Fry the bacon in a large skillet over high heat until it becomes crispy. Transfer to a paper towel, let it cool, then cut into pieces.

3. On a lightly floured surface, roll out the dough into a 30 cm circle. You should have two such circles. Sprinkle half of the grated Parmesan cheese, mozzarella, and bacon over each circle. Break 3 eggs on top of each and season with salt and pepper.

4. Place the pizza on a baking sheet and bake for 8–10 minutes, until the crust is golden, the cheese has melted, and the egg yolks have set. Transfer the pizza to a cutting board. Sprinkle with half of the parsley, chives, green onion, and minced shallot. Let cool for 2 minutes, then slice and serve immediately. Prepare the second pizza in the same manner.
