
Sourdough Pizza
Description
Delicious baked goods for the whole family. I use wheat sourdough starter at peak activity, and I often bake pizza with wheat flour using rye sourdough starter at peak activity — that turns out great too. This amount of ingredients is enough to make one pizza about 34 cm in diameter.

Prepare all the ingredients at once for convenience.

Sift the flour into a bowl, pour in the water, and add the sourdough starter.

Mix these ingredients and leave undisturbed for 30 minutes for autolysis.

After half an hour, add olive oil and salt.

Knead the dough thoroughly by hand for at least five minutes. Then shape the dough into a ball in the bowl, cover the bowl with a kitchen towel — leave it on the kitchen counter for about 3 hours for fermentation.

After three hours, my dough had become soft, porous, and airy.

Line a baking sheet with baking parchment, then stretch the dough by hand on top into a thin round flatbread—the base for your pizza.

Spread the base with a thin layer of tomato sauce, then arrange tomato slices on top.

Also arrange the salami slices.

Sprinkle everything with cheese grated on the coarse side of a grater. Put the baking sheet with the pizza in the oven, already preheated to 180°C, and bake for 10–15 minutes.

Serve the pizza immediately while it is still hot.
